Bringing in the Books

Andrew and I were able to head out to a local booksale this past weekend.   We spent three hours together sorting through books of all kinds to find treasures that we brought home with us.

I am so thankful that Andrew and I both share a love for books and learning.   Our home library has grown so much that we have to be choosy in which books we bring home with us, but we always find those books we just have to have.

This was the first booksale that we were able attend with each other since before we were married.   There is nothing better than purusing row after row of books while holding your hubby's hand. ;)

Lazy Weekends are the BEST!

We were able to spend the entire weekend at home together...with nothing on the agenda. Friends, let me tell you, those weekends are the bomb!

I spent the morning doing laundry - in my pajamas. Andrew began work on a DIY household project for me. We watched a football game and movies. We laughed, we cuddled, we talked. Aahhh, we need more weekends like these!

Today marks three years since Andrew proposed. Yes, he proposed on Halloween. I do not even think of this day as Halloween anymore - it's a day marked in our history forever. The beginning to our happily ever after :)

Love takes Time

Life is busy. Even in today's world of modern conviences, we are constantly going.

It's so easy to allow things to overwhelm us and occupy our thoughts, our lives, our time. There are times we are too busy to even enjoy life.

After almost 10 weeks of constant not-knowing and change, Andrew and I have found ourselves moving across state. We moved home - closer to family and friends. It hasn't been the easiest time in our lives, but it is without a doubt, where God has us for now.

In the upheavil of moving, changing jobs, and all that comes along with it, it has been hard to set aside a specific time just for us. Time to talk and laugh together. Time to share and pray together. Time to just be together.

The realization that love takes time came with an intense desire to steal away with my husband for the weekend, a day, or even just an hour to give our love the time it deserves. That we as a couple are more important that anything else going on in our lives.

Love isn't just following the ebb and flow of your emotions. Loving your spouse has to be intentional every single day - sometimes minute by minute.

When we reach the end of our lives, I won't really care if my husband raves about my cooking or a clean house, but I will care that my husband knows without a doubt that he is loved beyond words.

I encourage you to take the time to enjoy and love your spouse intentionally and to give your love the time and attention it deserves.

Weekend Memories

We had a good weekend. Tiring, but good. Friday night was spent at my husbands parents house. Saturday we had a family photo shoot and cook out with my family. Lots of family time which we love. :)

I am seriously obsessing over these crocs. I have searched high and low. chatted online with a service rep from crocs.com only to find out that they are out of stock until sometime maybe in December. Boo!

I managed to get a lot done this weekend in spite of being on the go. Throw in some graphic design along with snuggling in with the hubs for movie time, a drive around town with the windows rolls down, and some ice cream and I am one happy lady.

I love this man. Just sayin'. ;)

Sharing Blessings & Burdens...

This past month has been a whirlwind of uncertainty and blessings for us. We enjoyed a wonderful vacation to Colorado visiting my sister in law and attending a work conference...and celebrating my birthday!

We have been praying for several years that God would allow us to move back home - closer to family and friends. And, after 2 years of praying, He finally answered our prayers! We were so blessed to be able to move back home at the beginning of August. You can imagine how crazy life has been since we didn't know for sure whether we were moving until right before we left for our vacation in Colorado, packing as soon as we returned, tying up odds & ends there, and moving home. Our new place wasn't ready until after Andrew started his new job either which caused some worries, but God worked everything out perfectly.

Now? Every single time I see a moving van I can't help but think those poor people! Moving a few blocks was easy compared to moving to a different state. And...just when I think we are done moving, my parents and siblings are moving into a new house this week. Hello to packing even more boxes. We are grateful though that God opened this door for my family...they desperately needed to move out of their other house.

I received a call from my Mom at midnight last night informing me that they were on their way to my Grandmother's because she was headed to the ER. That is about all the details I have right now and I have been unable to get a hold of either of my parents and, since my Grandma lives out of state, I can't just go and check on them. Prayers for my family this week would be so appreciated.

Three years ago today, we took a leap of faith and stepped onto the path where God was leading.

Three years ago today, my dreams started coming true.

With three years behind us, I can safely say that it gets better each and every day that we are together. Thanks for the last three years, love. Whether we are snuggled close watching movies, sitting side by side with laptops working, or walking hand in hand - I cherish every moment with you.

Graceland...

The past few weeks have been a busy time for us. We haven't had a weekend to ourselves - just the two of us - in over a month. So, when my sweet husband came home with flowers and told me we were going out for the weekend on a long over due date, my heart melted.

I had been wanting to visit Graceland for forever since it isn't too terribly far away from where we live. Andrew? He wasn't so sure. Neither of us are fans of Elvis, but I wanted to go more for the experience. The Mr. decided he would be my escort. ;)

After standing in line for almost an hour (which seemed like an eternity in our humid Southern summer), we finally got the front of the line for the bus ride over to Graceland. I had not realized before going how huge Graceland - the attraction - is. I thought it was just the house and a few other things, but they had everything from gift shops, restaurants, car exhibits, and even planes to tour.

Graceland - the house itself - was elegant and really beautiful. It would be considered tacky by today's standards thanks to the decor from the 70's - just the way Elvis left it. Elvis purchased the house from a Doctor and his wife who built the house on land given to them by their Aunt Grace. Hence the name, Graceland. :)

I was a little disappointed we weren't allow to see the upstairs of the house. I loved the mirrors on the wall and this chandelier.

I didn't realize that Elvis was buried on the Graceland grounds - so are his parents and grandmother. I also didn't know that Elvis had a twin who was stillborn at birth.

We spent a few hours touring Graceland and still didn't see all of the different exhibits. It was a little sad to see so many people 'in love' with Elvis. There was a lady in front of us toward the end of the tour at Elvis' grave who said I just don't want to leave him... I just wanted to roll my eyes. I wonder what Elvis would think, if he were still alive today, of how people have turned him into such an icon?

After it was all said and done, we were both glad we had went. We loved it! It was wonderful to just walk hand in hand without having to hurry because we were expected some place. We followed with a quiet dinner and then a movie at home.

Life, Saving money, & Coupons!

We had my entire family down (minus 1 brother) this weekend to celebrate my Dad's birthday. My parents anniversary is next week so five of my brothers are staying with us until next Sunday. Talk about being invaded! ;) I never realized how small our house is...haha! We are loving having the boys here though - it is just a bit different. As I type, they are all settled in the living room playing chess and laughing with each other. Love my boys!

Our trip to Colorado is just a little over 6 weeks away. I am SO ready! We have so many exciting day trips planned and I'm looking forward to meeting up with other bloggers at the conference. I still have a lot to learn so I'm thrilled to be able to gather with like-minded people (who actually understand what I do) for a weekend of learning and fun. We're even having a luau!!

I went to Target this past Friday - snagged 2 t-shirts for just $0.24 each after sales and coupons - score! In all, I ended up paying $10 for over $50 worth of stuff. My cashier and the lady in line behind me asked me how I do it - I explained to them how you can save so. much. money just by shopping the sales and using coupons. The lady behind me said I must not work. Ha. I am a site designer and administrator for several different companies and my work week usually always goes way over 40 hours. So, I'm living proof that you don't need to spend a lot of time to plan an effective money saving shopping trip!

Last Saturday I taught my first coupon class. I even made it into our counties newspaper. I was thrilled with the response I got and will be teaching several other classes. We had 20 people show up for the first class and I was scared. to. death. This was my first time speaking in public. ever. But it went off without a hitch and I am more motivated than ever to continue helping people learn that they can slash 50% off of their grocery bills...without extreme couponing! (which isn't even realistic. blah!)

Celebrating Our 2nd Year

Andrew and I had a blast celebrating our second year together. I didn't take very many pictures - I was too busy enjoying our time together. ;)

We decided early on that, since our anniversary was on a Monday this year, that we would both take Monday off work to enjoy an extra long weekend together.

Can I just say heaven on earth? We hadn't had a long weekend to ourselves - no errands, work, family, church, or...life - in a long, long time.

We toured an old museum that had a fabulous collection. Everything from dinosaur bones to antique medical equipment. We spent a TON of time browsing through the treasures in this museum.

And we spent a few hours bowling together. Is there anything so wonderful as spending time just focusing on your spouse and your love for each other?

We spent most of our Anniversary weekend talking about everything. Where we want to be in five years. ten years. twenty years. Our ideas, hopes, and dreams. Sharing my heart with Andrew is one of the most amazing things - he challenges, encourages, and spurs me towards things I never would have dreamed of before we were married.

These past two years have flown by so quickly. Only 78 more to go and, honey, if they past as swiftly as the last two, we will be there before we know it!

{Crazy Life}

Things have been so hectic around our house lately. I keep waiting for things to slow down somewhat, but I think this is just life. And I wouldn't want it any other way. We have finally settled into our new house and we are loving it! It is perfect for the two of us right now. :)

{New Do}

Andrew loves long hair...so I told him I would keep my hair long until we had children. Well, after 2 years of really long hair, I decide that it was time for a change and he agreed! ;) I ended up getting it a little shorter than I wanted, but I chopped 8 inches of hair off. I am lovin' it. It will be wonderful this summer to have shorter hair -- and less time to blow dry. Yeah!

{Exercise}

I fell off the exercise bandwagon during our move. I have been trying to slowly build back up to 5 miles a day and finally made it last week! It is not nearly as effortless as it was before, but I know I will get there. Hoping to add in some Pilates and the elliptical this week. So far, I am dreadfully behind on my goal to walk 1,000 miles this year!

{Vacaaaaaaay}

I found out last week that I am accepted to attend a wonderful blogging conference! Since I started blogging professionally a year ago, I have learned so much. And there is still so much more to learn. So, we are headed out to Colorado Springs this summer. The conference is only two and a half days, but we have decided to make a vacation out of it since Andrew's sister lives in the Springs. We are going to be gone for 8 glorious days! I am getting really excited. We've already started planning our trip and it is going to be a blast!

{Movies & TV Series}

After a busy week last week, we spent most of our weekend vegging out on the sofa watching movies and TV series. We started Prison Break yesterday and we are hooked! We also watch Prince of Persia and Alice in Wonderland. I have never been a huge fan of Alice in Wonderland, and I still not a fan. I didn't like the new movie at all. Just not my type, I guess.

Rambling Thoughts...

I feel like this past week has been a blur. Between packing and unpacking, arranging, and trying to organize..I am having trouble keeping up with where things are! My sister and five of my brothers came down this past weekend to help us unpack. I couldn't have done it without my sister though - she helped me to arrange my kitchen, the boys put books on the shelves, cleaned the bathroom, and carried countless boxes to storage for me. I am tired, but happy with the progress we are making. Just a few more boxes then I can breathe easy for a bit before I really start to organize this house. I am crazy OCD about things being in the proper place.

I slept until 10 o'clock this morning. Shocking, I know. I don't even remember the last time I slept that late. We have been staying up late packing and unpacking for the past month and I am just plain worn out.

I love watching my husband and brothers interact. It took my brothers about a year of Andrew and I being together before they went from accepting his presence to really counting him in as one of the family now. It warms my heart seeing them all together. This weekend they had us all rolling with Gieco commercial lines and Calvin & Hobbes comics. ;)

Andrew has been my rock these past four weeks. I have no idea how I would have made it through without him. Love you, baby! <3

Thankful Thoughts...

Andrew and I moved last weekend. We had been praying and looking since August for a new house to rent since our old place had a few problems and just wasn't meeting our needs. Not only did we find a new place, but it is nicer, on a quiet street, and, best of all, cheaper rent!

Today, as I was unpacking boxes, I found myself grumbling though. I want to move home - back to our home state where all of our family and friends are. I didn't want to stay in the same town. I was in the middle of having myself a nice pity party when God whispered to me how blessed I am...

I have a husband who adores me. He works hard to support and take care of us. He is faithful and he loves to make me laugh. He spoils me beyond belief and he realizes that it is the small things that mean the most to me. He holds me when I cry, he prays with me, he laughs with me, and he loves me in spite of everything he knows about me. I know it sounds so cliche, but he truly is my soul mate, my best friend, and my better half.

God has helped me to grow in His Word through my personal Bible study and prayer as well as through my husband. Andrew is always encouraging and challenging me in my walk with Christ. We also recently joined a new church where God's Word is being preached. All of this has helped deepen my relationship with Christ.

While we may not live as close as I would like to our families, we live a lot closer than other people. We can easily go home over the weekends to visit just about whenever we want.

We may not have everything we want, but God has given us everything we need. Andrew has a stable job, we have a warm house, and a stockpile of food that was a pain to move. ;)

After counting our blessings, it was easy to pull myself out of my pity part and instead praise God for Who He is and all the blessings that He has given us!

Household and Kitchen Items...

A few months ago CSN Stores contacted me about doing a review on my blog. CSN has everything from kitchen gadgets to luggage and this corner TV Stand which I just loooove.

But, for months now, I have had my heart set on this baby:

A Kitchen Aid Blender. I puffy heart my Kitchen Aid Mixer so I can't go wrong with another KA appliance in my kitchen, right? Right!! I really wanted one red, but almost everything in our kitchen is black or silver so this one just goes.

We love fresh fruit smoothies around here so we are really excited about getting this blender!

I am thankful God gave me a husband who will shop and shop and shop with me until we find something we both like! I have been wanting to give our bedroom a make over for so long. Including our bedding. I have been looking at modern bedding and I just fell in love with the set above. Isn't it gorgeous? Of course, Andrew is usually really picky when it comes to choosing items like these, but, in the end, he usually just lets me pick it out. So long as he doesn't hate it, he's good. :)

I am thankful for a husband who helps me whenever I ask including tasks in the kitchen! We just wrapped up another freezer cooking day. I love having meals in the freezer that I can just thaw, reheat, and have on hand. It comes in so handy when we are driving back from visiting our family and we just don't feel like cooking. Since we started cooking meals for our freezer, we eat out once, maybe twice a month. I love knowing that we are making healthy choices in our eating habits. And homemade food is always so much better than most of the junk you can order at some fast food joint.

Our 2010 Christmas Card

I'm thankful that Andrew and I were able to celebrate his birthday and our Saviors birthday together again this past year. I have been meaning to post our card for a month and just haven't gotten around to it. So much to do, so little time! Life has been craaaaaazy lately, but it seems to finally be settling down. I am been enjoying some down time after our hectic traveling schedule for Christmas and New Years. Andrew ended up being sick over Christmas too so that just made it all the worse!

I'm thankful for God's beautiful creation. Especially when it is displayed so beautifully! We have had several snow days lately. It has been so beautiful here lately. And, of course, I love snow days! ;) We are suppose to get more snow this week sometime. I never remember it snowing this much when I was a child, but I sure am enjoying it now!

True Love

Andrew and I both love The Princess Bride. It is a simple and perhaps somewhat silly movie, but it always puts a smile on our faces.

There are times when we are having one of those days. When nothing seems to be on the right track, where we feel down and discouraged. It is during those times that our marriage, our love is strengthened.

And it is often during those times that we will just look at each other and start quoting this movie. The one we say most often? Wuv, True Wuv!

Andrew has held my heart for as long as I can remember. With every selfless action, I see the man that I not only married, but the man that I prayed for all of those years. A man who seeks God. A man who is tender, loving, selfless.

Today's world has turned love into a fleeting feeling. Here one moment, gone the next. But we all know that is not love. True love is selfless. True love is kind. True love is merciful. True love is faithful. True love is gentle. True love is commitment and choice. True love is everlasting.

Reviewing My 2010 Goals

I was reviewing my Goals for 2010 and it feels great being able to see what I was aiming toward last year...and to know that I actually accomplished most it!

:: Deepen my relationship with my Heavenly Father

I spent 2010 reading through the New Testament and really loved it! I do not like reading aimlessly in the Bible so it felt great to have a plan and then reach my goal! I also made it a priority to spend more time in prayer.

:: Financial Goals

We stuck to our financial goals really well this past year. We stayed on budget, we shopped for deals and menu planned in order to accomplish our goal. Our 2010 shopping totals came to:

Total Value of Items Purchased $6,802.16
Total 2010 Out of Pocket $2,073.01
Total 2010 Savings $5,104.98

:: Eat better and exercise more

We didn't get ourselves into gear on this one until September/October. We are inching away from all processed foods and I began exercising on a regular basis in October. I walked almost 200 miles October - December.

:: Cooking Goals

My goal for cooking was to try 2 new recipes a month. I surpassed this goal and loved every minute of it!

::Be the helpmeet my Husband needs

Andrew and I grow a LOT in our marriage this year. God is so good to us in that we know He created each of us for the other. Andrew is my gift and I simply love being his wife!

My Goals for 2011

While I don’t really believe in New Years Resolutions (no one ever keeps them!), I do believe in setting goals because like Zig Zigler said, If you aim at nothing, you will hit it every time.

I am a huge procrastinator and, if I do not have written goals or ideas, I end up wasting a lot of my time. So, in 2011 I am purposing to use my time more wisely. After reading the ebook Tell Your Time: How You can manage your time so you can live Fulfilled by Amy Lynn Andrews, I was encouraged and challenged to make better use of my time in 2011.

I tried my hardest to be realistic in choosing my goals, and I hope to be able to complete most of them in this new year. Now that I have written my goals I know what I am aiming for and I know that I will love being able to check items off as I go throughout the year.

Personal Goals

:: Study through the Old Testament

I already shared with you how I will be using this book by Kay Arthur in order to begin my study. I enjoyed reading through the New Testament last year and I am looking forward to spending a little more time and digging deeper into God’s Word throughout 2011 and maybe even into 2012 for this study.

:: Walk, Walk, Walk! 1,000 Miles in 2011

Sometime around November last year I finally got myself in gear and started walking on a regular basis. I started out slowly and am now up to five miles a day. My goal right now is to hit at least 15-20 miles per week and to walk 1,000 miles this next year. I have been using the Daily Mile and Daily Burn to keep up with my fitness routine and keep me accountable.

:: Eat Better

My husband and I have been slowly making changes to our diet over the past several months. We are looking to eat healthier in 2011 in order to lose weight and just be healthier all around. I will be making more meals from scratch in order to get away from so many processed foods and I even hope to begin grinding our own flour once we save up for a mill!

:: Do It Yourself Projects

I love DIY Projects; everything from refinishing old furniture, creating signs, and all that good stuff. I have not selected all the DIY projects that I hope to accomplish this next year, but I hope to share them as I create them. And, yep, I plan to share the flops too.

:: Graphic Design & photography

I have always loved graphic design and photography, but I often get lazy and don’t work on them. I hope to spend more time working on them this year and maybe even opening a new money making outlet with them!

:: Read 25-30 Books

I put reading on the back burner for the most part of 2010, but plan to change that this year. I want to read at least 25-30 inspirational books throughout 2011. Any recommendations?

:: Focus on Family

It is easy to become too busy to focus on my family. Especially since I work from home. I intend to observe media free weekends throughout 2011. I began that towards the end of 2010 and it makes my weekends so much more relaxing and pleasant when I feel like I am not constantly having to choose between work and family.

Financial Goals

:: Pay Off My Car

My husband and I came into our marriage virtually debt free. The only debt I have is my car which is over half way paid off. We are going to spend 2011 trying to pay off the rest of my car loan. This is a HUGE goal for us – something Dave Ramsey would call a Big Hairy Audacious Goal – because, when we look at our budget, there should be no way we are going to be able to do this. Any extra money we make, we plan to throw at the car because with God all things are possible!

:: $40 Weekly Grocery Budget

We did very well spending an average of $40 a week on groceries in 2010 and I plan to stick with that in 2011. I hope to be a little more strict now that we have a wonderful stockpile going, but we’ll see how that goes. I am looking forward to seeing if I can beat my 2010 spending totals in 2011. Yes, I like a challenge! I plan to do this by shopping the sales and using coupons, menu planning, and cooking once a month to avoid ‘emergency’ runs for take out.

:: Track all of our Money

I have spent the better part of my weekend creating an Excel document to track all of our spending. I want to give every dollar a name in 2011 so we can see the areas we are doing well on and the areas in which we need to buckle down.

Christmas & New Years

I know everyone always says this, but it's hard to believe Christmas and New Years has come and gone already. I looked forward to Christmas for months and it came and went just like that! *snaps fingers* I plan to do a full Christmas recap sometime this week (hopefully) and I also hope to review 2010, but we shall see.

New Internet Service

After a little over a year with a Mi-Fi from Verizion we are finally getting DSL in our home! I am beyond excited about this. This means no more download limits, I can watch Netflix on my computer whenever I want, and I no long have to worry about paying overage if I use too many gigs. Ahh, freedom!

2011 Goals

I finished writing up my goals for 2011 and will be posting them tomorrow. I am excited to see where the new year takes Andrew and I!

Swiffer WetJet

I got one these babies this past weekend. We had had our old mop since we moved in 2 years ago and it was leaving a dirty film on our floors anytime I mopped with it. I have been wanting one of these for months but, being a die hard bargain hunter, waited until the time was right. I scored a Swiffer WetJet + a refill for only $11. Woot!

Breakfast for Dinner + NCIS

Andrew is once again working overtime this week. Not that I am complaining. It's actually an answer to prayer to help us meet one of our 2011 goals. But, I am looking forward to some serious snuggle time, breakfast for dinner, and NCIS tonight with my man.

Andrew, you are a man of few words so I'll make this short and sweet. You are my world, my life. I didn't know all those years ago that the little boy who shot me with a rubber band was the one God made just for me, but I am so grateful that He did! I have learned so much more about Who God is through you - you challenge me, encourage me, and listen to my almost-never-ending ramblings about what I am currently studying.

I love you beyond what words can describe. Thanks for being mine.

Christmas Baking, Work, & Time

Home for Christmas I am so excited about heading to our home state on Friday!! We are spending Christmas Eve with Andrew's family then heading to my parents later that night. My family always goes to a movie the day after Christmas and this year we will be seeing the new Narnia movie that just came out. I feel like a little kid all over again...I can barely wait!

Baking Christmas 2010 baking will commence in the morning. I will most likely spend the bulk of my day in the kitchen. I love baking and just being in my kitchen in general. It makes me feel all housewifey-ish. ;)

Christmas Gifts I have been really, really good this year. I have not even touched the gifts Andrew placed under our tree for me. Does this mean I am just getting lazy...or old. haha. ;) I am really excited to open gifts Christmas Eve morning with my man. I got him a gift I know he will just looooove!

Whistle While You Work I am looking forward to not only time with family, but more time with my man this week. He worked overtime last week, we made a quick overnight out of state trip this weekend, and we are tired...and desperately just need some time together. We plan to spend the Monday after Christmas back at home with nothing but the two of us, some hot cocoa, and a stack of movies!

Time Mondays usually feel like they d.r.a.g. by so slowly, but Andrew just called to say he is on his way home. And um, I didn't even realize it is 4:45. So, um, yeah... I'd better scoot! ;)

I mentioned on Monday that I am planning to work on studying my way through the Old Testament. It took me awhile, but I finally decided to use a book by Kay Arthur. I did her book on Desiring God's Own Heart about a few years ago and loved it. I learned and grew so much through this book that I knew any of her other books would have to be just as good.

So, I ordered this baby from Amazon one day last week and ~~dug in for a two week wait since I'm cheap on shipping costs~~ was really looking forward to starting this new Bible study in 2011. However, yesterday I received an email from the seller letting me know that the book had been damaged in storage and I would be receiving a full refund. I was good with that - at least they didn't send me a damaged book, but I was a little down because I wouldn't be getting the book before the beginning of next year. I sat down to pray last night that God would bring another book to me before the first January so I could begin when I planned.

This morning I was thinking over all of the books that I have and how I have quite a few Kay Arthur books. I decided to double check once more before I ordered another book and lo, and behold...guess what I found on my shelf? Yep, the same book that I had ordered. {All of you other bibliophiles can empathize with me on not knowing every book that is on your shelf!}

It was a gentle reminder to me that God listens to every prayer and works out things for our good...even when it doesn't seem/feel like it. Nothing is too big or too small for our Lord!

10 New Recipes for Christmas Baking!

I love to cook and bake and, since Christmas is quickly approaching, I have decided to try out some new recipes. Maybe not the best time to try new recipes -- especially if they flop -- but I am going to give it a go. I tend to be really picky when it comes to food and desserts are included in that, but my husband will eat just about anything that isn't nailed down {love you, honey!} and he has been asking for a Coconut Cream Meringue Pie for a few months now and I am finally going to try my hand at it.

Since I am trying to stretch my horizon in the kitchen, here are ten yummy new recipes I have on my list of 'To Try' recipes!

Gifts, Snow, and Hot Cocoa!

Grocery Shopping I went grocery shopping for the first time in two months. Yep, two whole months. Of course, we made small trips for eggs, milk, and such, but nothing major. Our stockpile is still going strong, our freezer is packed, and I really only made the trip for the few ingredients I need to do my Christmas baking. I am making new to me recipes this year so I am excited. Next will I am going to practically live in our kitchen!

Wrapping Gifts I am 98% done wrapping all of my Christmas gifts. Andrew and I sat down for 2 hours the other night and wrapped, wrapped, wrapped. We almost finished, but we ran out of tape. haha!

Moving from 2010 into 2011 One of my goals this past year was to read through the New Testament. I accomplished that goal by finishing Revelations on December 6th. So I have been contemplating what study to do this year. I am a goal oriented person - I wonder aimlessly if I do not have a specific goal in mind. I order a Kay Arthur Inductive Study series on the Old Testament from Amazon so that I can begin studying my way through the OT. I have never read the entire OT so I am going to take thing slows (since there is SO much to learn) and actually study the Old Testament. I am guessing this will take me 2+ years at least, but I am excited about it!

Snow It snowed here again yesterday. It didn't snow for long and it didn't stick, but I am guess with it snowing this early in the season that we can count on snow later on in the year. You know, some that actually sticks around. I love snow!

Christmas Gift I love giving gifts. Picking out the perfect gift for people I love. But when asked what I want for Christmas...I have such a difficult time coming up with gift ideas for myself. Does anyone else have this problem?

Hot Cocoa I realized this week that I have never made hot cocoa from scratch. That, my friends, will be changing this week! ;)

Getting Organized!

I am an organizer at heart. I love things to be all neat and in their place. But, let's be honest, things are rarely all put away in their place on a consistent basis. We leave shoes out, my purse lands wherever I happen to plop it down when we walk in the door, and we won't even discuss the piles that my hubby leaves around the house.

So, for the past few months, I have been trying to form some sort of schedule for my daily routine. While I love being a stay at home housewife, there are days I get really bored and wonder aimlessly throughout the day not really getting much done. Having a organized schedule has helped so much - I'm happier, our house is cleaner than ever, and things actually get done. I have been sticking to my schedule for 8 weeks now and I am lovin' it!

I even love organization when we travel. I am a light packer - Andrew and I share 1 duffel bag when we travel to our parents for a visit. His stuff is neatly arrange on the left and mine on the right. Why is mine of the right? Because I'm always right, of course! ;) When we travel I take my computer and, more often than not, work with me. I currently have a nice laptop bag, but am contemplating a briefcase for when we travel so that my papers won't get bent and all crumpled up.

Don't you just love how this briefcase is detachable? Love it!

Maybe I'm a little OCD about trying to keep things neat and in their place. But a clean house, a clean car, and a freshly made bed make this woman happy! =)

Am I alone or do you love to organize too?

'Tis the Season

I seem to have a love/hate relationship with the whole holiday season and especially with Christmas.

I love putting up our tree, getting all of the gifts ready, putting up decorations, Christmas music, Christmas movies, Christmas books. But I hate the traffic, the crowded stores, the long lines, and the sky rocketing gas prices!

I try to focus more on the things I love about Christmas though. The Christmas mood struck me early - and I mean early - this year. We put our Christmas tree up on November 1st! Last year, if you remember, we had our adorable Charlie Brown Christmas Tree.

We loved it! But, after some mad shopping the day after Christmas last year, I thought we'd move up a bit. ;) We know now a slim 6 foot Christmas tree sporting all of our ornament this year. The Charlie Brown Tree is now a center piece on our dining room table.

Andrew has been reading Skipping Christmas out loud to me. I love it when he reads out loud, it relaxes me ~~and I usually fall asleep~~ so much listening to his deep voice. I have watched Christmas with the Kranks for the past several years, but have never read the book it was based upon. We decided to change that this year! It is a fun book even though there is a small bit of language in it. Luther is definitely more deceitful in the book than in the movie and he has given us quiet a few laughs at his antics.

But, without question, my faaaavoritest Christmas book of all time is The Best Christmas Pageant Ever! This book keeps me rolling year after year and never fails to delight! And I was even more thrilled when I discovered that they made a movie too. Woot!

I have officially finished my Christmas shopping. Although, considering I started in January, I'm not sure how great of an accomplishment that is! Last year we made simple treats and stuff for our siblings and did small gifts for our parents. And, while we aren't able to do large gifts, we wanted to do a little more this year. Hence the shopping since January. After all, we have 17 people to buy for just between our 2 immediate families!

I love the shopping and choosing just the right gifts for each person, but when it comes to actually wrapping the gifts. Well, let's just say that isn't my strong suit. In fact, as humiliating as it is to admit, Andrew is actually better at wrapping gifts than I am! Which is fine with me since I usually decide on the gift, he can at least help wrap them, right? Right! ;) We are sitting down tonight to start wrapping - I'm thinking some hot cocoa, Christmas music, and a wrapping party sound just right!

I am SO very glad that it is finally Friday! This week has just seemed to d.r.a.g. on for me. I have had kind of a blah week, but I am looking forward to seeing what adventures my hubby and I can land ourselves in this weekend.

This is the last weekend of the year that we do not have any plans so we are going to make some homemade pizza, read, watch movies, cuddle, talk and just enjoy being together. I love the fact that it doesn't matter whether we actually go out or choose to stay in...we still enjoy dating each other!

I was so relieved to finally be home after traveling to Arkansas and Missouri for Thanksgiving. A three state road trip on a holiday weekend isn't all that fun, but worth it to see family. But, after a day of a quiet house, I started missing our loud and sometimes obnoxious {just keepin' it real, ya'll!} families. I am really looking forward to Christmas. Andrew gets more days off than we expected so we'll be able to spend extra time with the people we love this Christmas!

It SNOWED here last Tuesday. It didn't stick and only latest for about an hour, but it snowed. For those of you who don't live in the South...it's a rare occurrence to get any snow at all, let alone in November!

I'm off to make Pizza Dough and I may even whip up some of these Homemade Oreos!

Celebrating 18 months!

While we were in Branson, Andrew and I celebrated a year and a half of marriage! I know some people may think it's silly to celebrate the little milestones, but we find delight in every little thing about our marriage.

We began our night out by playing putt-putt golf. We hadn't played since before we married and had a blast! Andrew beat me...barely. ;)

After enjoying a lovely stroll down the River Walk, we watched a water and light show. It was really neat because they time the water shooting up and the lights to music. Afterward, we had a relaxed meal at Old Chicago Pizza Company then headed out to see a movie.

As we celebrated we found ourselves so thankful for the many blessings God has placed in our lives. Never have I received an earthly gift so precious as my husband. Thanks, babe, for the past 18 19 months...here's to the next 78 1/2 years! ;)

The Duggar Family, Decisions, and Michael Bublé!

The Duggar Family I have been reading The Duggars: 20 and Counting!: Raising One of America's Largest Families--How they Do It and I am loving it! They are holding fast to their faith in spite of all the negative comments they receive. It is very obvious that their love for the Lord and each other runs deep. While I don't think I will ever have 10+ children, I do agree with them that children are indeed a blessing from the Lord! They are such a precious family. =)

Sticks and Stones Whoever came up with the old addage: sticks and stones may break my bones, but words will never hurt me obviously did not have a clue as to real life. Loved ones say things to hurt you...not purposely maybe, but it hurts just the same. Even after you forgive them, the hurt still lingers.

Decisions, Decisions We have some major decisions coming up. Please pray for wisdom that we will know and follow God's will for our lives.

Pounding the Pavement I finally got serious about walking in the last month and finally reached my goal of 25 miles a week -- this past week I beat that by walking a whopping 29 miles. Woot woot!

Branson Trip | September 2010

In September Andrew and I headed out with my family for a visit to Branson, MO. My family and I have visited Branson often since I was little due to the fact that my grandparents use to own a restaurant close by and it was less then a 6 hour drive from our home.

My sister and I ended up having to take our brothers up there for the first two days by ourselves due to some unforeseen complications with my Dad's work schedule, but we had a blast! We shopped till we dropped, took the boys swimming, and just enjoyed being together.

Once my parents and Andrew arrived later in the week, we spent 3 ~~extremely tiring and wet~~ fun days at Silver Dollar City. Andrew and I spent a few nights in Branson during our honeymoon, but we didn't get a chance to head to SDC so Andrew was especially excited to be able to visit. He loved it!

We spent a lot of our time wet from certain rides. But what fun is there in staying dry? None at all.

Andrew rode his first real roller coaster. And has become addicted. I was rather hoping he wouldn't like it since I am a chicken and won't ride the things. He still asks for me to ride when we go next time. I told him when pigs fly. He then wondered aloud how to get a pig onto his Dad's plane. *sigh* Oh, the man I married!

We were able to see how Blow Glass creations are made. Andrew loved this and it was really neat to watch.

I found this adorable airplane rocker while we were there. I told Andrew once we start having children we have to purchase this. He is going to turn them into airplane fanatics anyway so why not start early? I think an airplane themed nursery would be not only unique, but absolutely adorable! =) What do you think?

We ended our trip on a Sunday morning, planning to head home around 10ish, but that didn't happen. We ended up spending 6 hours in the emergency room with my sister. Nothing life threatening, but it made for a long day of worrying and waiting.

I was glad to be able to spend some time with my family and it was so much fun seeing Branson and Silver Dollar City through Andrew's eyes. Family is such a blessing!

Holiday Shopping, Decision Points, and Books!

Books I love 'em. Made a trip to my home state to spend the weekend with my mom for some one-on-one girl time. Something we hadn't done since before Andrew and I married. We had a great time at a book sale and chatting over lunch.   We ended up with a TON of books and now I only need to figure out where to put them!

Andrew   Let me tell you, I LOVE that man!   He put together the nightstand I ordered for me while I was gone plus he cleaned our bathroom and made dinner for me when I got back Saturday afternoon.   He rocks my world! ;)

Holiday Shopping I am so happy that we are 100% done with our Christmas shopping. Well, I am. haha Andrew still hasn't quite purchased my gifts yet. You know men though.

Bush While we were book shopping this weekend, I came across former President Bush's new book Decision Points.   I'm afraid I couldn't work up enough gumption to pay the whopping $25 for the book, but my mother did. I read some while I was still there and I LOVED this book. It looks awesome and I cannot wait to read the rest of it. I miss him in office!

Online Reward Programs   I am a die-hard bargain shopper. I hate, hate paying full price for anything. In fact, I won't do it unless it is absolutely necessary.   I started shopping for Christmas in January. Yep, January.   I have looked for deals all year long in order to stay under our Christmas gift budget for our family - with 13 siblings and 2 sets of parents to buy for...it can get expensive.

My favorite way to cut costs was to join Swagbucks to earn free gift cards for making searches online. Other favorites are MyPoints, Inbox Dollars, and Send Earnings where I receive gift cards {from MyPoints} and cold hard cash {from Inbox Dollars and Send Earnings}. Miscellany Monday: Netflix, Taylor Swift, and more!

Netflix. Somehow our DVD's are not finding their way into our mailbox, but rather being returned to Netflix. We're two for two in the past 2 weeks. Honest thief...or simple mistakes?

Overtime. Andrew is working lots of overtime this week. It's only Monday and I already feel lonely. :P So, I decided it was time to stop talking about redesigning my blog and go for it. Thoughts? I'm lovin' the new header! ;)

Hitting the Pavement. I have finally gotten on a walking routine. It only took me 11 months, but better late then never, right? Right!

Once A Month Cooking. I whipped up enough meals to last us for the next month this past Friday. Easiest OAM cooking day yet. Now my freezer is stocked and I only have to worry about salads and sides for the next 4-6 weeks. {sigh} this makes me happy! ;)

Taylor Swift. I recently got her new CD Speak Now and, at first, I did not like it. She always come across as a bit whiney and know-it-all-y to me. But, after 10 days of listening to it, I am beginning to like it. My favorites? Mine, Sparks Fly, Back to December, The Story of Us, Mean, and Better Than Revenge.

Girl Time, Blogger, and Giveaway Winner!

Girl Time - my mom and sister came down this past weekend for some girl time. We watched movies, talked non-stop, and made good use of the paraffin bath Andrew gave me for my birthday. It was heavenly. My soul was in desperate need of some girl time.

Blogger - has changed things so much. I am on Wordpress about 90% of the time with my other site so I was surprised by the changes you can make now without editing any code. Niiiice.   Now if they would only work out all the other kinks...

Christmas - yeah, Christmas. I am in the mood for hot chocolate, Christmas decorations, and holiday music.   I've also got a Christmas DIY project up my sleeve if I can talk hubby into it. haha ;)

Celebrating the Bling...

Yesterday marked 2 years since Andrew proposed. Yes. He proposed on Halloween.

Not that I cared, of course! ;)

We had gone out with friends for a quick photo shoot. It had started raining that afternoon so we were only able to shoot for about 30 minutes or so. Why the photo shoot? At that time, Andrew was headed to Iraq in four short weeks as a subcontractor with the Air Force.

We had gone to one of our favorite spots down by the Arkansas River. We sat there as the sun faded, listening to the water gently splashing.    I wasn't prepared in the slightest. We got up the leave and, when I noticed he wasn't follow, I turned around to find him down on one knee.   Tears came to my eyes and my throat closed at his heartfelt and love-filled words followed.

When no answer was forth coming from me, he finally got up and gently led me to a bench. I was so excited and deliriously happy - this is what I had been waiting for him to ask for ten years.    Once I finally calmed down, I told him to ask me again.   He did. And I, of course, said you betcha! ;)

He slid that ring on my finger and I had never felt more content. I had never known such a peace. I was right smack in the middle of where God wanted me and I knew it.    I kept looking at my ring all night long, and I couldn't help but giggle and grin like a woman in love.

The next day we attended a friend's wedding...I was excited to finally be able to share that we were engaged. We arrived to find that everyone knew already through another friend of ours. I was um, bitterly disappointed to say the least. I told a scrawny total of 4 of my friends....since everyone knew at the wedding before we even arrived.

I struggled with that for a long time. I had waited and waited and waited for my turn. And it was ruined. I wasn't able to see the surprise, love, and happiness for me on my friends faces when I told them. That moment was taken away from me by another.

But...you know what? In the end, it didn't matter. They knew just the same as if I had told them. They still celebrated with me. Sure, it hurt. I was disappointed, but life moves on. I don't think my friend even realized what they did in taking that moment from me. A moment I will never get back. It took me a long time to get over that but, with wedding details quickly filling up every. single. moment. of my time, I soon did.

We celebrated with our families. I can't say that our parents were surprised. We rejoiced and laughed with those we love...those who mean the most to us. We were ecstatic to begin this new phase of life. To join our lives together forever.

When we said our I do's just a short five months later, it was a sweet, sweet time for us. Our dream was finally becoming our reality. Oh, we have our days...just like every other couple. But with every day, with every kiss, with ever tiff, with every look...it just gets better. Our love grows and changes daily.

Thank, babe, for loving me. I am so glad God led our families together through our homeschool group so long ago. Who could have known how far the Lord would bring us?

Callie Asked....

1. What do you like best about your current profession?

I am currently a stay at home wife.   I love being home to help my husband prepare for work in the morning and I really love the fact that I am home when he get off work. I often welcome him home with a big smooch and sometimes a glass of hot tea. ;)

2. What is your favorite color and why?
It's a toss up between Pink and Brown. I love pink because it's soft and feminine. I love brown because it goes well with pink!

3. How did you come to know the Lord?
My sister and a few other kids from our church were saved. I remember being interested and wondering what it was all about, I asked my parents about it and they explained how Jesus came to die to save me from my sins and that all I had to do was ask Him into my heart to be saved. I prayed then and there with my parents and was baptized soon after. God blessed me with incredible godly parents!

4. What was your favorite family tradition growing up?
Every Christmas, after our gifts are open, we sit down to a breakfast of muffins with a single candle. We would sing Happy Birthday to Jesus and then blow out our candles. This made Jesus so much more real to me early on in life, and it also better highlighted the true meaning of Christmas!

Miscellany Monday: Craziness...

Um, yeah...it's been awhile. Things have been crazy around our house for the past month. I thought we were getting ready to settle back down into a routine, but um..haha, nope. So, I thought I would pop in and at least let ya'll know I am still alive.

We are having spaghetti and salad for dinner...along with some NCIS. It smells heavenly and, after a long and stressful day, I can't wait to settle down with my man and just relax.

I have decided to get a job outside of our home. I know some women are perfectly fine staying home by themselves once they marry, but I am going cuh-razy here all day, five days a week by myself.

Had an interview at an eye clinic today. Um, yeah, if I were a patient walking in there I would turn right back around. They were jeans and airbrushed t-shirts. And mismatched shoes - 'the funkier the better!' Um, yeah...that's not really me. But, if offered the job, I would probably take it. :P

I am SO ready for Christmas. I am having to force myself not to put up Christmas decorations or listen to Christmas music until at least November 1st. But we have already begun our Christmas movies marathon! ;)

Since we moved into our rent house last May, I have been slowly adding things to our house. I am not the best in this area, but I love looking at different websites to see what they offer in this area.

CSN stores is one of the places I love to look. You can order anything from bath items, to bar stools and dining room accessories.

I have been drooling over this baby for awhile now..

We finally made it back from vacation last night. We arrived home 8 hours later than we had expected due to an unexpected trip to the ER to sit with my parents and sister. We're all fine and home now. So happy to be back in my own bed! ;)

I have a cold/sinus infection. Why is it that I always get sick when on vacation?

Maybe it was riding water rides and walking around wet for hours during the 3 days at an amusement park that helped it along. Hmm..

It has been absolutely gorgeous weather the past 2 days.

I turned our A/C up to 80 and still froze inside our house today. haha

Now that vacation is over, it's back to the daily grind. My Reader boasted an impressive 700 posts to read when I opened it today...I confess that I cheated and only read today's posts and deleted others.

I also paid bills and balanced our check book. Sooo much fun! ;)

Mini-Vacay...here we come!

Andrew and I are headed to my parents house today to begin our mini-vacay. I am so excited about this trip. Andrew and I haven't been to this vacation spot since our honeymoon a year and a half ago. And we didn't do much site seeing them...mostly I just slept. haha! ;)

I am actually going ahead with my family tomorrow and Andrew will join us Wednesday night. Please pray for safe travel for us all and no sickness plagues us while we are on vacation. My family has a horrible habit of getting sick when on vacation. :-P

To Paris, With Love...

Since Andrew has been working so much overtime lately, we were so thankful when Labor Day came around to have an entire day to ourselves! We weren't exactly sure what we wanted to do, so we booted up the computer and looked to see what there was close by. In the end, we ended up traveling over three hours away to visit our States town of Paris.

This Paris town had built a miniature replica of the Eiffel Tower. So, we had to drop by for a few pictures, of course. It was kind of a let down once we got there, but I am so glad we went. It was fun to explore and see what will probably be the closet to the real thing we'll ever see. 'Cause when this girl takes on Europe..it won't be in France!

After a wonderful lunch overlooking the lake, we drove around looking at all of the boats, jet ski's, and lake front houses. Then we parked and headed to the beach. I love walking in the sand barefoot. We held hands as we walked along the shore and basked in all of our blessings. An afternoon to focus completely on each other, our love, and so much more. It was absolutely divine!

We headed home that night long before we were ready, but with renewed hearts. After spending so much time apart it was such a wonderful delight to focus on just the two of us and revel in the love we share.

I love you, not for what you are, but for what I am when I am with you.

Snack Time!

We usually don't purchase too many snack items because they are either really expensive or nothing but junk food that we don't need.   But, every now and then, I find a pretty good deals and we stock up on the snacks we love.

Here are a few of our favorites...

I have been trying to add a little more fiber into my diet, but I am really, really picky.   So when I saw that Fiber One's Oats & Chocolate granola bars I just had to try them.   They are delish!

I don't really like these, but Andrew loves 'em.    Kroger had these on sale for $1.99 awhile back and I had a $0.50 coupon that doubled to a $1 - score!     They are pretty good just not the greatest for me.   However, these make for perfect snacks during the afternoons for Andrew {or perhaps a non-messy-eating-in-my-car-on-the-go breakfast}.   ;)

I was surprised I like Nature Valley's new Granola Thins, but I do!   They taste just like a graham cracker with chocolate on the back {to me anyway}.    I have some with peanut butter on the back too, but I haven't tried those yet. But these are so, so yummy!

I have told you before how much I love Betty Crocker Warm Delights - the chocolate chip is my favorite. I am still addicted. I only indulge about once every 1 to 2 months or so, but they are definitely high on my list of favorite snacks. I think they are great for when I am craving chocolate chip cookies and don't want to make an entire batch for only Andrew and I. This way I get to fulfill my craving in a single serving. Which is awesome!

I know these aren't really snacks...or healthy, but I have fallen in love with SoBe's Strawberry Daiquiri's. Delightful!   Sugary, but delight. Andrew loves the Pina Colada flavor.

We also love popcorn.   This is the only snack item I purchase at WalMart - they are $5 for a box of 20 bags making each bag only $0.25 each. Can't find snacks for much cheaper than that!

Since we have a $40 a week budget and try to be savvy shoppers, we purchased all of these snacks when they were on sale at Kroger. I never pay full price for snacks - we couldn't afford it very often in I did so we stock up when prices are at rock bottom. All of these snack items I talked about often have coupons in the Sunday paper or online at Coupons.com or RedPlum.

Is there anything better than a glass of sweet tea on a breezy afternoon? The temperature here keep flucuating - one day we have high 90's with lots of humidity, the next we have next to no humidity and wonderful breezy days. Love this time of year!

Andrew has been working overtime for the past three weeks. 10-11 hour days during the week and 6 hours on Saturday = one tired couple! We spent our Labor Day on the road, site seeing, and enjoying a walk on the lake. It was refreshing and much needed. No more overtime this week means I finally get my hubby back. I kinda like to have him around. ;)

I slept until 8:30 this morning. I hate not getting up and helping my hubby off to work, but after over a week without a full nights sleep, I needed sleep. I hate when I battle rounds of insomnia.

We had an extremely busy weekend...and, after Andrew worked overtime several days last week, I really hated to see him headed back to work this morning. But I am really thankful that he has a job! :)

I am working on a DIY Project. I am trying to redo an old 50ish style table my mother-in-law gave me, but it is proving to be a challenge.

Church yesterday was wonderful. Several messages I needed to hear. Andrew ended up playing the piano since the regular pianist was gone for the weekend. It was so nice to hear him play in church again. A little old lady asked me if he serenades me with love songs at home. I grinned and told her yes! ;)

I recently discovered several new snack items that I love. Where have they been all my life? I have always been a picky eater, but since Andrew always insists on me trying things at least once, I have discovered a new love for things I would never have thought I'd like.

Foodie Friday: Hash brown Casserole

I have never been a huge casserole fan. Especially one that combined crunchy with soft. Just didn't work for me. But, when my sister modified a hash brown casserole recipe given to us, I fell in love. This casserole is heaven an earth.

Hash Brown Casserole

48 oz. Hash Browns, thawed {sometimes I use them semi-frozen since it makes them easier to managed}
3 C. Sour Cream
1 Can Cream of Chicken Soup {optional. I make it without this all the time}
1 C. Butter, melted
1 tsp. Salt
1 medium Onion
2 C. Cheese, grated

Mix all ingredients together except the hash browns together until well mixed. Add hash browns. Stir until well mixed. Place in greased pan and bake at 350 for 1- 1/2 hours or until golden and bubbly.

This recipe makes a big dish - enough for about 8 people. For Andrew and I, I make a full size batch and divide it into thirds and freeze what I do not plan to immediately use. It freezes well, but make sure to either thaw completely or add about an hour onto your baking time if baking frozen.

Our Wedding: Getting Ready...

After going to sleep relatively early the night before

I was up and ready to go by 6:30 the morning of our wedding

My Mom, Sister, and I stayed in a hotel room the night before our wedding since my family lives about an hour away from town. No need to stress us out anymore than we already were, right?

Mom along with Lauren and Ann {one of my bridesmaids} stayed at the church until almost 2 a.m. getting things ready that we hadn't finished. I felt bad getting to sleep by 11 p.m. when they stayed out so late. But, we were all ready to get the show on the road

My brother called me about 8-ish to let me know he had been in an auto accident

This put somewhat of a damper on our day. I could tell my brother was hurting and in pain even though he wasn't seriously injured. It was hard leaving after the wedding knowing that he was hurt.

After we finished with our hair we headed over to Merle Normans to have our make up done

That was a new experience for Hannah, my sister in law, I don't think she had ever had make up on before

We all had a fun time watch her squint her eyes as they applied her powder.

Between Andrew and I we have 13 siblings. 13 mischievous siblings at that. So, we decided to forgo the usual decorated car mess and hid our car until it was time to leave.

Before I knew it, it was time to put my dress on.

I wore my Grandmother's pearls that my Grandfather gave her. We had a little trouble getting the clasp to clasp. My sister tried first...

then my mom

then my bridesmaid, Ann

Then my wedding planner and I both tried too

We finally decided to tie it with a hair tie!

We dropped by and got smoothies for all my girls because we didn't think we would be able to eat anything else, but I got hungry and my flower girl was kind enough to share a few slices of cheese with me.

Andrew and I texted back and forth the entire morning.

I have always dreamed of leaving my veil down for the wedding and my husband lifting it before our first kiss as man and wife.

But I got really nervous right before I walked down the isle and, afraid of hyperventilating on the platform, I opted to leave it back so I could breath somewhat normally.

We all snuck a quick peek as guests arrived

And then waiting until it was time to start!

We are looking for a new church home. This has been hard since we live in a town with mainly uh, retired folks. We have no friends. No one to hang out with. No one to call if we needed help. This makes me feel really lonely. I miss going out to Starbucks and book browsing with the girls. I miss being a part of my friends lives.

On the flip side - being so far from family and friends has been great for our marriage. We have grown so much together throughout the past year of our marriage. We do everything together and I love it! I couldn't ask for a better best friend than my husband. He completes me.

We are going on a mini-vacay with my family mid-September. I am trying to decided if I should go for the entire week and leave hubby at home. Or, stay with hubby and join the rest of the family Wednesday night with him. Decisions, Decision.

Foodie Friday: No Bake Cookies

Can I be honest? I'm a Chocaholic. I love chocolate. I crave chocolate. But, I usually don't keep chocolate in the house for just that reason. So what's a girl to when she has a fierce chocolate craving? She makes No Bake Cookies of course! ;)

I learned how to make these before I was even in my teens. They are easy peasy to make and tastes so incredibly yummy. I uh, have to admit...they usually don't make it to their cookie form. Who can resist the warm gooey chocolate straight from the pan. Ahh, not me.

No Bake Cookies

1 C. Butter
1 C. Milk
2 C. Sugar
8 Tbs. Cocoa
1 C. Peanut Butter {I love crunchy, but smooth works too}
1 tsp. Vanilla
4 - 4 1/2 C. Instant Oats

Melt Butter in Sauce Pan on medium heat. Stir in Milk, Sugar, and Cocoa until well blended. Boil hard 1 minute - make sure to not over boil and stir occasionally. Remove from head. Add Peanut Butter and Stir until melted. Blend in Vanilla and then add Oats 1 cup at a time until mixture reaches the consistency you are wanting. Drop cookies onto wax paper and allow to set about an hour. Enjoy!

I spent last week back in my home state visiting family. We celebrated Caleb's 7th birthday - with a chess board cake. Isn't it cute? ;) We went to a children's museum, and also went to a friends wedding.

It was a fun, but busy week. Now I am tired and so far behind on housework.

I love Strawberries. They are pretty to look at, yummy to eat, and make awesome smoothies!

I love shopping the sales and using coupons. I paid $25.10 for everything pictured above...and saved $181.88!!

I love Scrubbing Bubbles Extend-A-Clean Shower Cleaner. It's awesome. 'nuff said! ;)

New Adventures...

Foodie Friday: Homemade Pizza

We love homemade pizza around our house.   We rarely, if ever, order take out anymore.   I make up the dough ahead of time and freeze it for days we are craving pizza.   The dough thaws within 1 1/2 and only takes 20 minutes of prep and cooking time - depending on how detailed you get with your toppings!

We have been using a pizza dough recipe I found online that was suppose to be a knock off of Olive Gardens Pizza, and it was pretty good. But then I found a new pizza dough recipe from The Pioneer Woman and we'll just say I'm not looking back .   The recipe produced light, fluffy, and oh so yummy pizza every time.

I did tweak her recipe some to fit out tastes a little better though. After all, following recipes to the letter would be boring, right?   ;)

Homemade Pizza Dough

Ingredients
3 C. Warm Water
2 tsp. Yeast
8 C. All Purpose Flour
2 tsp. salt
2/3 C. Extra Virgin Olive Oil

Place Warm Water in bowl and sprinkle Yeast over top.   Allow to sit 4-5 minutes.   Meanwhile, add flour and salt in mixing bowl. Turn mixer on low and slowly add Olive Oil until mixture becomes wet.    Gently stir yeast/water mixture and add to other ingredients until dough forms a ball and the sides of the bowl are clean.

Coat bowl with oil {I use regular oil since olive oil is so expensive - it is just so the dough will rise in the bowl instead of sticking, but feel free to use whatever you like!} and place dough inside, turning to coat all sides with oil. Cover and let rise 1-2 hours or until doubled in side.

When dough has risen punch it back down and separate into 4 equal rolls.    Preheat the oven to 500 degrees.     Unless you plan on having 4 pizzas at once, you can freeze the other 3 rolls in freezer safe baggies to use later. Trust me, they come in handy later on when that pizza craving hits. ;)

Roll dough onto pizza pan or pizza stone and, using your hands, stretch dough into desired shape. It may seem rather flat, but it will rise during baking.

Add toppings. We love pepperoni, minced garlic, and lots of onion and cheese!

Bake pizza at 500 degrees for 10 minutes or until crust is golden brown.

Our Wedding: Rehearsal Dinner

We debated on where to have our rehearsal dinner - at the church or a local restaurant. In the end, we opted to not pile anything else on top of our ever growing list of things to get done. So, we settled on a local restaurant that worked out perfectly for our wedding party!

It wasn't anything fancy, but it was cozy and perfect for an intimate dinner with our closest family and friends to thank them for all they had done for us over the years

We all had a great time talking and laughing the night away!

I am not exactly a people person, and I hate having to actually talk in front of a group of people. One of my pet peeves is people staring at me, but when it came time to give a short speech and thank everyone for all they had done I was at least able to get out something. It was short and sweet, but heartfelt

I purchased gifts for each of my ladies based upon the friendships I have shared with them over the years

For our parents we made Through The Years books - detailing our life stories with pictures and memories that meant the most to us throughout the years. I loved this idea and so did our parents!

Andrew got all of the guys Visa gift cards

It was a great time of fun and fellowship with those closet to us in celebration of our big day!

The Pioneer Woman Cookbook...

I have heard nothing but rave reviews for the Pioneer Woman's Cookbook ever since it was published. My mother and I were discussing it one day and then next time I went home for a visit guess what she had for me?! I was ecstatic and could barely wait to try out some of her recipes.

I found her website about a year ago and filtered through a ton of her online recipes. After taking forever to decided on a recipe, I finally settled on making her Best Lasagna. Ever. I omitted the sausage because I cannot do ground beef and sausage together, and it turned out absolutely fantastic! And ever better is that her recipe is too large to fit into only 1 on my 13 x 9 in cake pans so I end up with 2 lasagnas. I stash the second one on the freezer for a quick meal we can pop in the oven anytime.

I am wondering where this woman has been all my life? Her Pizza Crust is to die for! Her onion strings are A-mazing. The Marlboro Man's Favorite Sandwich is at the top of my list to make next. Oh, and we can't forget about her homemade doughnuts. My, oh my!

The Pioneer Woman's Cookbook is filled with dozens upon dozens of yummy looking recipes. My only problem after receiving it? Which recipe to try first!!

Homemade Ice Cream!

My family always celebrates the 4th of July like every American Family. We break out the grill, try to stay cool in the sweltering heat, and watch as fireworks fill the sky. Growing up 4th of July was always one of my favorite holidays.

One of my favorite things was that we always made homemade ice cream for the 4th. So, when Andrew and I married, I made it my mission to carry on this tradition for our little family. We spent our first married 4th of July back in our home state with family, but this year we opted to stay home, relax, and enjoy our 4 day weekend. And make homemade ice cream!

Homemade Vanilla Ice Cream
for 1.5 qt ice cream maker

Ingredients

2 Eggs
1/3 Cup + 2 TBS Eagle Brand Milk
Pinch of Salt
1/3 Cup Sugar
4 TBS Jell-O Instant Vanilla Pudding
1/2 TBS Vanilla
4 Cups Milk

Beats Eggs and Sugar on high until creamy. Add Eagle Brand Milk, pudding mix, salt, and vanilla until well mixed. Reduce mixer to low and add milk. Mix well to ensure ingredients are well blended. Chill for 4-6 hours before making ice cream for firmer results, otherwise pour straight into your ice cream maker!

I heart roses and tulips... in any color, but there is just something about a Red Rose that seems to exclaim I love you forever and always!

We headed back to our home state 2 days after I arrived back home. This time for a book sale. ;)   If you know me, you know I love books!   Andrew and I both managed to find some hidden jewels among the thousands of books for sale.   We came home loaded down with 3 overflowing boxes!

Friday afternoon my parents and siblings took us out to celebrate my birthday before we headed back home. It was a hectic, but fun week and I love anytime I am able to spend with our families.    Mom and Dad gave me a Wedding Gown Preservation kit so I can send my wedding dress off to be cleaned and packaged to keep it's original beauty.     I don't know if I am ready to put this baby in a sealed box just yet...

I am sentimental to a fault and the thought of not being able to get it out and touch it when I want to isn't something I want to think of right now. I do, however, want to preserve my dress in the best possible way so I will probably send it off soon. Have any of you sent your dress to be preserved?

Andrew did exceptionally well this year in choosing my gift. He got me a Dr. Scholl's For Her quick heating paraffin bath! I was stumped as to what he purchased - we like to guess and see how close we are to the actual gift - but thrilled to pieces when I opened the box! I hate going to the salon or spa for paraffin baths, but now I can have them in the comfort and safety of my own home. Woot! ;)

Saturday was my actual birthday, I woke up at a whopping 5:30 a.m. with a nasty head cold. We spent most of the day snuggled up on the couch, being lazy, and watching Psych. We feasted on Beef Stroganoff for dinner along with Homemade Ice Cream and Chocolate cake for dessert. A long afternoon drive with my sweetie topped it all off for the perfect day.

Butterhorns

I love dinner rolls - yeast rolls being among my favorites. But, wanting to break out of the regular dinner rolls mold, I found this Make ahead Butterhorn recipe and fell in love. It is rather time consuming, but only in the fact that you need to allow the dough time to rise. :) You can easily whip up a batch, freeze, and allow to thaw and rise whenever you need them. Andrew and I made these during our last Once A Month Cooking day, and...well, let's just say that they didn't last all month. haha ;)

I'm always hesitant to adjust yeast recipes until I try them at least once. So, I didn't make any changes whatsoever to this recipes because they came out just perfect!

Make-Ahead Butterhorns
{makes 32 rolls}

2 Tablespoons dry yeast, heaping
1/3 cup warm water (110-115 degrees)
9 cups flour, divided (you can use any mixture of white or whole-wheat flour you’d like)
2 cups warm milk (110-115 degrees)
1 cup butter, melted
1 cup sugar (we substituted sucanat)
6 eggs
2 teaspoons salt
3-4 Tablespoons butter, melted

In a large mixing bowl, dissolve yeast in water. Add 4 cups flour, milk, butter, sugar, eggs and salt. Beat 2 minutes or until smooth. Add enough remaining flour to form a soft dough. Turn onto floured board and knead lightly. (Or, knead in mixer until sides of bowl are clean, then knead two more minutes.)

Place in a greased bowl, turning dough once to grease top. Cover and let rise in a warm place until doubled (1-3 hours). Punch dough down and divide into four equal parts. Roll each part into a 12-inch circle and brush with melted butter. Cut each circle into 8 pie-shaped wedges.

Roll up each wedge for wide edge to tip of dough and pinch to seal. Place rolls, top down, on baking sheets and freeze. When frozen, place in freezer bags and keep frozen until needed.

To bake: Take out as many frozen rolls as you’ll need and place them on a greased baking sheet. Thaw for five hours or until doubled in size. Bake at 375 degrees until lightly browned. Brush with melted butter as soon as they come out of the oven. Remove and serve immediately or cool on wire racks.

These are awesome dinner rolls! I think you should try them soon. You'll thank me later! ;)

Nacho Chicken Casserole

I have been meaning to post about some of the recipes I have tried so far this year. If you'll remember, it is a goal of mine to try at least two new recipes a month throughout 2010. So far, I would say I have surpassed this goal. We have tried a bunch of new food - some yummy and not so yummy - but tried all the same. ;) I am going to start a Foodie Friday series to highlight some of the yummy recipes we've tried so far this year! Feel free to join in with me.

Among the list of favorites is Nacho Chicken Casserole. I found the original recipe here on Betty Crockers site, but below is my version since I rarely follow a recipe to the letter. ;)

Nacho Chicken Casserole

2 cups Chicken, cooked and diced
1 can Rotel
1 can Cream of Chicken Soup {I've used Mushroom in a pinch too!}
1 - 1 1/2 Cups Shredded Cheese
1/2 - 1 Cup Corn
Tortilla Chips, broken

Combine first 5 Ingredients in a Casserole dish. I usually put the chips in along with it before I bake it at all because I do not like crunchy chips mixed into my dishes. So, I go ahead and mix in my tortillas chips in so they get the full bake time. This recipe is really, really cheesy, so whether you like that or not depends on how much you'll want to put into the dish.

I love it because this dish is so versatile - you can serve it along side veggies and rolls, over chips, or in tortillas wraps. :) It's a snap to mix up and easy to clean up after as well. You can't beat that!

Kitchen Gadgets and Chicken Tenders...

I love purchasing new items for our home.   I enjoy the challenge of finding an awesome buy and then seeing how many ways I can use it to serve our little family.     I have already told ya'll how much I love my Kitchen Aid Mixer.

I also hold a deep love for crispy chicken tenders and homemade french fries. Mind you, I don't get them often, but during the rare times that I do make them for us I would find myself longing for a deep fryer.   Baking or frying the chicken tenders on top of the stove just doesn't cut it.    I've been telling my hubby for months that I needed a deep fryer.   And hey, we are in the South...we fry everything down here.    I even tried to bribe him with the fact that I may even allow him to fry up some fish if we got one.   Oh, and probably some hush puppies too!   ;)

So, when CSN stores wrote and asked if I would like to review a product from one of their online stores.   It really wasn't that hard choosing what to review... but CSN has over 200 online stores filled with awesome kitchen gadgets, vanity items, modern home furnishing and more.    I looked just to make sure nothing else caught my fancy, but in the end remained steadfast on which item I wanted to review. My hubby so sweetly agreed with me once I showed him this bad boy...

This baby is on it's way and it is just the thing for these hot summers. No need to leave the oven on to bake those chicken tenders anymore. Woot!

My Life in Pictures...

I'm sure by now that most of you have either forgotten about me or thought I've fallen off the face of the planet! haha ;) Things have been crazy busy these past couple of months, but life is finally beginning to slow down somewhat...before it picks back up in the next few weeks. So many things have happened - too many to write about - so I thought I would share pictures with a few word to let you catch a glimpse of what we have been up to. =)

My four youngest brothers and sister came to spend a weekend with us

Summer is now upon us in full force. I think we are in for a bad summer since the humidity is already so bad. Not looking forward to July and August! :P

so glad it's Friday!

I have been sick in bed half of this week. Fun stuff. That makes almost 4 weeks in a row with some kind of sickness. That does not make for a fun month. :P But, I am finally beginning to feel like me again. Praise the Lord! I have gotten to catch up on some of my Law & Order: SVU though. ;)

We're spending the weekend with my sister and four youngest brothers. I'm tired and still a little weak, but I am thrilled to finally have my brother's back down. We are celebrating their birthdays by taking them out for a special day. Should be fun!

Date Nights!

Thursday nights are our designate date nights at home. It's an entire evening that we set aside without distractions and focus solely on each other. We started this a little over four weeks ago and it quickly became the highlight of my week!

Last night Andrew made us a delicious homemade pizza. His pizzas seriously rock. We have not ordered take out once since he began making them homemade. That's how yummy they are! And he even washed the dishes and cleaned up the kitchen without being asked. What a man! {sigh}

After feasting on the wonderfully yummy pizza, we shared Root Beer Floats. We rarely have these, in fact, I think this was the first time we've ever made them together! I was always the designated Float maker while still living at home and my hubby had to agree that I can make a mean Root Beer Float. haha! ;)

We picked up a few card games at Target a couple months back and have fallen in love with trying to beat each other. We aren't competitive one bit! bwah! ;) My favorite is Scrabble Slam, but it can quickly become boring. Especially when I keep beating my hubby rather soundly. Don't worry though, he plays to win and never goes easy on me when we play Monopoly Deal. It's so hard finding games that are only for two people. Any suggestion?

It is the time during those dates nights, when we laugh and tease and snuggle, that make me fall in love with him all over again. It reminds me of the little boy I met all of those years ago, and came to love before I ever realized what hit me. He's always been such a tease...and he hasn't changed one bit. And that is just the way I like it! ;)

Soooo, I never got around to posting this yesterday. And shockers, I didn't even post a menu plan last week. I was too sick. There goes my goal of posting a menu plan every week, but alas! One can't help if she's too sick to post. :P Thankfully, my father-in-law was kind enough to help me out and call me in some cough medicine. I can finally breathe again. We both have bad colds, and we kind of had a last minute change of plans that through us for a loop. But, we have over 40 meals stocked in our freezer so we are happy campers!

Sonic, how I love Thee...

My addiction to Sonic's Cherry Slushes began long ago...

Every Tuesday after piano lessons my mom would take my sister, my brother, and I over to Sonic for Happy Hour. Oh, the joy! Somehow ordering that Cherry Slush always made my day. ;)

I was so excited when Sonic decided to bring Happy Hour back a few years ago. I was still working for a doctor before Andrew and I were married, and we would have Drug Reps bring us drinks from Sonic often. You can't beat a free Cherry Slush. haha!

Lately though, I have been trying to branch out and to not be so settled in my ways. My husband loves Sonics Ocean Water so I've given it a try a few times, but have not liked it enough to purchase it for myself. But, while my Mom and Lauren were visiting, I decided to try a Strawberry Slush. Hello, love!

The only problem I have now? Wanting 2 things at the same time. {sigh} Ahh, how to choose?!

Girl Weekend!

This past weekend my Mom and Lauren came down for a Girl Weekend! I have been so excited about this and about went crazy waiting for last weekend to get here. And, as usual, it passed all too quickly!

I hadn't really had a chance to sit down and chat with my Mom since December at Christmas...which doesn't really count since there is so much going on during Christmas. It was really great to be able to just sit down, relax, and talk away!

I was sick most of last week so my wonderful and sweet hubby practically cleaned, cooked, and did laundry before my family got there. Is there anything more wonderful than knowing your husband is willing to help out around the house? I would have fallen apart without him. Love you, Sweetie! ;)

He even came shopping with us so that he could drop us off at the door, pick us up, and carry the shopping bags to the car when we were hopping from store to store.

Even thought I wasn't feeling well while Mom and Lauren were here, we still managed to squeeze some shopping into their trip. I love, love, love purses. But, I'm really picky when it comes to finding purses that I like enough to actually buy. I haven't bought a purse in more than two years, but this past weekend I got three! After all, a girl can never have too many, right? ;)

Andrew and I are trying to get rid of all of our boxes we still have laying around from when we moved in last year. Please tell me we are not the only newlywed couple to do this?

Andrew knew I was having a rough week and bought me flowers. I love him that man. Oh, yes I do! ;)

We found a really great deal on an upright freezer on Craigslist. I told Andrew I must be a true housewife now because I got so excited and giddy about finally being able to purchase a freezer. With our Once a Month Cooking, it just seemed to be more practical. Although, we did manage just fine with only an above the fridge freezer. I just couldn't stock up on anything that needed to be frozen, but alas! Now I can do both and this makes me absolutely happy, happy, happy! {grin}

I realized this week that I never finished my Wedding Recap Series. This makes me sad. So, in order to make me happy again, I'm going to start posting recaps again...ya know, whenever I have some free time. ;)

I know I've shared my love of cakes before...well, it's really a love-hate relationship. I start out enjoying it, but when my hands start cramping and it's time to clean up. I don't like that so much, but I do enjoy being able to make things for friends. I made a Island Themed cake for our pastor's wife's birthday last Thursday. Here is one of the only picture I took...uncompleted. We ended up topping it off with a boat and an umbrella. ;)

I am really looking forward to this weekend because my Mom and sister, Lauren, are coming down. Woot woot! We are going to be shopping, talking up a storms, and all that girly stuff. I'm so excited!
